Where the Harvest Meets the Table: An Evening with Niwa at Hazelmere Farm

What if the evening begins not with the clink of glasses, but with the quiet rhythm of a working farm? Bathed in the soft glow of late summer, the sounds of South Surrey’s Hazelmere Organic Farm will become the score for a dinner by Niwa where many of the ingredients will have been harvested from the property just hours before. 

For Niwa, this setting extends beyond a beautiful backdrop and soundscape, offering a reflection of the restaurant's ethos. Guided by the seasons and informed by Japanese flavours and techniques, Niwa's cuisine begins long before it reaches the kitchen, with the farmers who cultivate each ingredient and the land that sustains it. Hazelmere farmer Naty King has been working with the team at Niwa since their previous project, Ugly Dumpling, and that relationship remains firmly rooted in the shared philosophy of locality and reciprocity.

As the sun dips below the horizon, each course will be guided by the season’s freshest and finest. Chef Darren Gee will be preparing the multi-course dinner on the farm’s breathtaking property, and will allow whatever is at its peak that day to inform the menu. Keeping with Niwa’s dining style, all dishes will be prepared to share amongst the table. Additionally, a beverage pairing that highlights their favourite sakes and wines will be available as well as a purposeful selection of bottles.

More than an elegant dinner, the evening will celebrate the relationships that sustain exceptional food: between chef and farmer, kitchen and field, and the guests gathered around a shared table. It’s farm-to-table in the barest sense, without the buzzword hype that risks abstracting the essence of this dynamic. With this, Niwa's dinner at Hazelmere Farm promises something enduring - a reminder that remarkable meals begin with the land and the hands that tend it. Surrounded by the very fields that supply each dish, guests will experience the essence of farm-to-table dining: thoughtful, seasonal, and deeply connected to place.
