Vancouver’s Cult Fave Sandwich Spot Expands With a Day-to-Night European Style Bistro Next Door

One of our earliest guests on Mates on Crates, Chef Lina Caschetto (see her episode here!) has a new concept that’s caught our attention. Touski is the next chapter from the powerhouse behind cult sandwich mecca, Say Hey Cafe & Deli. Opening next door, the new project shares some kitchen infrastructure but moves into a more complete restaurant format, giving Caschetto and co-chef Neil Hillbrandt more room to cook with freedom and instinct. Hillbrandt, who cooked at Bar Gobo in its early days, has been collaborating with Caschetto for years, and Touski feels like a natural extension of that relationship. The name comes from the French phrase tout ce qui reste, or “everything that’s left,” which sets the tone for a menu shaped by what’s on hand, what’s in season, and what feels right that day.
What makes Touski feel especially promising is its built-in change of pace. During the day, it will run with espresso from Modus Coffee and an in-house pastry program that deliberately sidesteps the usual bakery formula. By night, the room shifts into a smaller, more intimate bistro with a concise food menu, a short wine list, and a martini program. The space itself carries real character: a former Chinatown flower shop reworked with soft yellow walls, green tile, reclaimed neighbourhood wood, and a turntable in the corner, all pointing toward a room that feels lived-in, relaxed, and full of personality rather than overly polished. Touski is aiming for an early April 2026 opening, with day and night service launching together.
