I imagine that if you were to ask most people who make a habit of dining out in Vancouver, one thing they would tell you with confidence is that atmosphere is an integral aspect to the experience at large. That glow that your friends develop after a glass of wine or two, or the shared looks of awe after the first bite of a knockout dish? Those moments are best backdropped by a room that matches the tone. That said, it’s easy to get caught up in the atmosphere (that’s the point after all) and neglect to consider the intricacies of what makes a room what it is. If it’s challenging to put a finger on what exactly carries a vibe into the space, that’s most likely the point entirely.
Restaurants generally break onto the scene as fully-realised images. Opening night comes around, and walls are painted, drapes hung, and the decor has been placed with the kind of intentionality that makes the room feel the most natural thing in the world. Of course it’s these lamps and these flowers, and of course they’re placed right where they are, because where else would they be? Well, these seemingly minor details were all choices that, perhaps more often than not, came about only after hours of debate. Ask anyone in hospitality who has undergone the venture of a new opening, and they will tell you without an ounce of hesitation that the journey is messy, confusing, and a whole lot of work.
In collaboration with Design Vancouver Festival, on Tuesday, September 22nd, Co-Owner and Chef Lina Caschetto will be inviting guests into Touski (the beautiful finished product) to hear the story of how the space came to be what it is today. While the dinner unfolds, Lina will be in dialogue with co-chef Neil Hillbrandt, designer Calen Knauf, and graphic designer Adrian Ho as they explore the intertwining creative processes that brought Touski into being, from initial vision to design execution, visual identity, and menu curation, alongside all of the trials that come along with undergoing such a vast and intentional project.
Guests will enjoy a welcome snack and drink, followed by a three-course long-table dinner and dessert while they not only soak in the atmosphere, but are invited to understand it with a rarely afforded degree of insight. Moderated by Michelle Sproule from Scout Magazine, the conversation will offer an insider’s peek into the layers of discussion, collaboration, and execution that go into the making of a restaurant. As the evening winds down, guests will be invited to ask questions and engage with the project from the inside.
Whether you dwell in the realms of designers and restaurateurs, or you’re simply interested in enjoying a dinner that keeps pace alongside a unique glimpse into the behind the scenes processes that give shape to a restaurant long before the doors open, I would suggest hopping on these tickets quickly, as a limited 20 tickets will be offered per seating.
Tickets are priced at $157.50 (tax included) per guest, and cover a welcome snack and drink, followed by a three-course seated dinner and dessert, with an optional wine pairing available for purchase. The event will take place on September 22nd, with the first seating from 5:00pm - 7:15pm, and the second from 7:30pm - 10:00pm.
