Vancouver’s downtown dining scene is getting a fresh taste of the Pacific Northwest this fall as the Hyatt Regency prepares to welcome guests to Cloudstreet, a newly redesigned restaurant concept focused on highlighting the ingredients, producers, and landscapes that define the West Coast.

At the heart of this new space is Chef de Cuisine Craig Sung, whose expansive career has taken him through hotel kitchens from Vancouver to Australia, including time working alongside Michelin-starred chefs. Most recently, Chef Sung served as Executive Chef at Forage at the Listel Hotel, where he developed a reputation for a thoughtful, locally-focused approach to sustainable Pacific Northwest cooking. As Chef Sung carries these values forward into this new endeavour, guests can look forward to fall and winter menus that draw inspiration from the changing seasons and the abundance of British Columbia. Small plates, soups, salads, and mains are built around ingredients sourced from local farmers, fishers, foragers, and artisan producers.

“Our menu pays homage to the rich forests, rugged coastlines, crisp mountain air and region’s harvests,” says Chef Sung. “Every dish reflects the warmth and generosity of the season, layered with bold flavours, refined techniques, and a contemporary West Coast perspective.”

The restaurant’s physical transformation has been guided by the same West Coast sensibility. Floor-to-ceiling windows invite natural light into an expansive space overlooking Burrard and West Georgia, while warm finishes and contemporary furnishings give the room a balance between airiness and intimacy. The setting is designed to transform as the day goes on, from morning meetings and business lunches, to dinner and evening drinks.

The bar program extends the regional focus with a thoughtful selection of local spirits and craft beer alongside zero-proof and non-alcoholic cocktails. Likewise, the wine list brings together Old and New World selections with particular attention paid to British Columbia’s increasingly diverse wine scene.

For Hyatt Regency Vancouver, Cloudstreet represents a renewed approach to hotel dining that puts a stronger emphasis on the character of the region surrounding it. For Chef Sung, the restaurant provides an opportunity to translate the landscapes and producers of British Columbia that have informed his culinary expressions throughout his career into a revitalised dining experience that feels contemporary without losing its connection to place.

Located in the heart of downtown Vancouver, Cloudstreet is positioned as a restaurant for both visitors and locals, offering a chance to experience the Pacific Northwest through its food, drinks, and earnest hospitality. Cloudstreet opens to guests on Friday, September 18 at the Hyatt Regency Vancouver, and will be offering 30% off to celebrate.

Breakfast will be available from 6:30am - 11:00am, lunch from 11:30am - 2:00pm, and dinner service from 5:00pm - 9:00pm.
