Vancouver’s dining scene just got a bold new addition with the opening of Uchu Cevichería & Raw Bar, the city’s first dedicated Peruvian coastal‑style cevichería, opening on February 6th, 2026. Founded by Chef Ricardo Valverde of Suyo Modern Peruvian, Uchu brings the flavours of Peru’s Pacific seafood culture to Chinatown with fresh ceviches, tiraditos, leche de tigre shots and more, paying tribute to the vibrant acidity, heat and ocean bounty that define the cuisine’s roots.

Valverde is joined by operations lead Felix Ng, restaurant manager James Reynolds, head chef Owen Chen, and wine director Michel Durocher, forming a team dedicated to showcasing coastal Peruvian seafood traditions through bold, expressive dishes. The menu crosses Nikkei and Chifa influences, reflecting Peru’s multicultural cuisine, with highlights like multiple styles of ceviche, tiraditos (Peruvian‑style raw fish), leche de tigre shots, causa layers and raw seafood towers that celebrate the ocean’s diversity.

Designed for both intimate dinners and social gatherings, Uchu’s 68‑seat space features booths, table seating and a central bar, with high ceilings and artisan junco‑reed installations by Peruvian artist David Goicochea anchoring the room in maritime spirit. The drinks program complements the food with classic cevichería‑style cocktails, original creations, crisp wines and pisco options crafted to cut through bright citrus and spice while echoing the fresh flavours of the coast.

Uchu is open Tuesday through Saturday from 5 p.m. to 10 p.m. and closed Sunday and Monday. Reservations are recommended as buzz for the concept continues to build after its recent opening.
