In the spot formerly home to bar Haifa, a polished, seafood and caviar-focused dining room is launching at the base of the Deloitte Summit Tower. The first Vancouver restaurant by the ambitious hospitality group, The Key Collection (who are opening several properties including a new Yaletown nightclub: Heist), brings a quietly opulent coastal menu to the heart of Vancouver’s business district.

Osetra, led by chef de cuisine Tim Nguyen, leans into raw and refined preparations like scallop crudo, paella-style share plates, and playful caviar treatments. Vancouver icons Zoe Bates (Sula, Ellipsis) and Shawn Jones (Hawksworth, Chambar, Jungle Room) have designed impactful cocktail and wine programs respectively.

Inside, floor-to-ceiling windows, sculpted lighting, and rippled glass details create a sleek, modern space that feels more like a low-lit cocktail salon than a traditional seafood house.

Osetra opens November 28 and operates Tuesday to Sunday, 5 pm to 12 am (closed Mondays).
