Today, we’re excited to announce our latest episode of Mates on Crates, featuring Hilary Nguy, Owner & Executive Chef of Sushi Hil. Chef Hilary San has been a staple in Vancouver’s sushi scene for over 27 years, previously running the beloved Tamaki Sushi for two decades before opening his current establishment, the Bib Gourmand-rated Sushi Hil. With a dedication to consistency and simplicity, he has cultivated a reputation for high-quality sushi that balances casual dining with meticulous execution. His passion for the craft stems from an unexpected start as a sushi apprentice, and to this day, he remains committed to perfecting each piece of nigiri, making Sushi Hil a favorite among both industry professionals and the public.
