A pillar of Vancouver’s dining scene for nearly two decades, Chambar continues its legacy of culinary excellence with Apprentice Dinner Series — a monthly spotlight on the next generation of chefs. Launched in April the affair has already generated a popular following; June’s Vol. 3, helmed by Chef Christopher Vega, is already sold out (jump on the waitlist now in case there are cancellations), proving just how eagerly Vancouverites have embraced this evolving series. Each dinner offers a four-course menu crafted by an apprentice chef, reflecting their unique culinary journey, cultural background, and creative voice.
So far the series has featured rising talents like Chef Tori Fielding (Vol. 1) and Chef Nathan Zelyas (Vol. 2), each bringing their own perspective to Chambar’s acclaimed kitchen.
The upcoming Vol. 3 features Chef Christopher Vega, whose menu pays tribute to his Mexican heritage and childhood roots in Monterrey and Mexico City. Dishes like lingcod ceviche with pineapple salsa and adobo-braised beef short rib on blue corn gorditas will delight diners before a dessert of chocolate sponge, flan, and raspberry sour cream add a playful, nostalgic finish. His sold-out debut is a clear reminder of why this series has become one of the most exciting monthly tickets in the city.
With Vol. 4 confirmed for Tuesday, July 2, now’s the time to book your seat. Chef Michael Kean heads this next edition and his menu looks to be influenced by French cuisine and techniques featuring prawn croquettes, asparagus à la Flammande, smoked trout, beef tartare and craquelin pain perdu.
