We’re excited to have just launched our latest episode of Mates on Crates, featuring Rocio Mogollon Plasencia, Lead Bartender at Four Seasons Resort Whistler. Home to Braidwood Tavern and its immersive Memoir cocktail program, the property offers guests a polished mountain hospitality experience with thoughtful food, inventive drinks, and a setting that shifts beautifully with the seasons. Rocio has helped shape that experience into something deeply intentional, where cocktails are designed not just to impress, but to evoke memory, mood, and a true sense of place.

Rocio brings a culinary foundation and global hospitality perspective to the bar, having studied culinary arts in Mexico, completed internships in Spain and Monaco, and built her Four Seasons career across Mexico City, Punta Mita, Toronto, and now Whistler. She has been with Four Seasons for a decade, spent the last five years in Whistler, and has become a driving force behind cocktail programs that are both technically sharp and emotionally resonant. It was a pleasure to sit down with Rocio to chat her journey from Mexico City to Whistler, how bartending became the perfect bridge between kitchen and service, the intentional development of the Memoir cocktail menu, and all of Rocio’s favourite spots.
