Bistrot L’Stage in Victoria: One of Canada's Best French Bistros Outside of Quebec
If you asked me where to find Canada's best French food, I'd probably answer your question before you finished asking it.
Montreal. Quebec City. Obviously.
Outside Quebec, though?
There are some fantastic French restaurants scattered across the country. Francine's in Calgary is a new toutes les étoiles on the scene. Toronto has several, like Le Swan or Le Baratin. Vancouver has never had a shortage of places where you can order steak frites and a nice bottle of Burgundy (Les Faux Bourgeois).
A bistro isn't about white tablecloths or tiny portions with tweezers involved somewhere along the way. It's somewhere you settle into. You order a glass of wine, then another. Maybe somebody suggests fries for the table. Somebody else decides the tartare sounds too good to pass up. Three hours disappear without anyone noticing. Butter isn’t measured. Bread is everywhere. Normal behaviour is nowhere. And one of the best places in Canada for this bohemian behaviour isn't even close to Quebec.
It's in Victoria. More specifically, Fernwood. Yes, Victoria, with all of their excellent cafes, their red fish and their blue fish, has one of the coolest places for dinner (and happy hour) in the country.
Tucked across the street from the Belfry Theatre is Bistrot L'Stage, a little neighbourhood restaurant that feels less like a Vancouver Island restaurant inspired by Quebec and more like a French bistro that accidentally ended up on Vancouver Island.
Fernwood certainly helps. The neighbourhood already has that slower pace that makes you want to stay awhile. Heritage homes line the streets, independent cafés and little shops sit on the corners, and on a summer evening the whole place feels surprisingly European. Sit on L'Stage's patio with a martini while people wander to a show at the Belfry, couples walk their dogs, a solo espresso drinker reads a book at Little June, like I did with Ian McEwan's latest book, What We Can Know, non per-formatively, of course. Anyways, you quickly forget you're only a few minutes from downtown Victoria.
The restaurant doesn't create all of that. It simply fits into it perfectly…like most great bistrots. Vibe matters! Am I think the first think of that? Dinner here never feels like something you squeeze into your evening. It becomes the evening. Everything here starts before dinner even arrives. Don’t pace yourself. Order as much as you can, but in waves. Four things at happy hour. Martinis before it ends. Then get into the larger courses, the sides, the dessert, more martinis, more wine, maybe a beer. Beer before liquor, gets you to the fun quicker. Liquor before beer, act charming like Richard Gere. I think that’s the saying.
L'Stage has one of those happy hours that makes cancelling your other plans seem like a perfectly reasonable idea. The menu isn't enormous, but it doesn't need to be. It's built around exactly the kind of food that makes ordering for the table feel inevitable.
The burger is outstanding and worth showing up early for on its own. Then there are the frites, served exactly as they should be, hot, crisp and alongside a generous helping of mayo. We also ordered the focaccia, and I'd happily come back just for that. Perfectly salted, served with a few small plates you can choose from…warm with cultured butter, creamy brie, cured meat…
By the time happy hour winds down, dinner naturally takes over.
The menu changes regularly, so instead of chasing signature dishes that have to stay forever, the kitchen works with what's available. Every visit is a little different.
The tartare changes depending on the ingredients and the season. Ours was made with a jalapeno cream and hickory sticks. The week before, it was Big Mac style. I don’t know, I’m sure it’s exactly what it sounds like, which is awesome.
Alongside that came a bright green salad that balanced out some of the richer dishes, and a beautifully cooked chicken piccata. Nothing arrived with unnecessary flourishes. No dramatic table-side presentations. No paragraphs explaining where every ingredient came from. Just thoughtful food. And I’m sure if you asked, they’d be happy to tell you.
The drinks deserve just as much attention as the food.
L'Stage has built one of those wine lists that feels approachable but never predictable. There are plenty of familiar bottles if that's what you're after, but the staff are just as happy steering you toward something you've probably never heard of. It’s a place to ask questions knowing it will be a conversation instead of an awkward encounter. Good wine programs should encourage curiosity.
Then there is the dirty martini.
If you spend enough time in Victoria's food scene, somebody will eventually tell you to order one here. They're right. You can have it with gin or vodka, it's garnished with three enormous olives, and it arrives with a little carafe holding the rest of your martini. It's beautiful. Instead of rationing every sip because you don't want the glass to be empty, you simply top it up whenever you feel like it. There’s even an adorable mini one you can order, even if I like them as big as I can get.
Nobody hovers over the table asking if you're "still working on that." Nobody makes you feel like you're taking too long. If you decide another plate sounds like a good idea twenty minutes later, great. If another round of drinks turns into dessert, even better. It's exactly what service should be, but especially at a bistro, where the whole point is to order when you feel like it, eat at your own pace, and let the evening unfold as you get more cool and more fun and more smart (because of martinis).
Spend a weekend in Victoria and you'll find excellent cafés, outstanding bakeries, and world class seafood restaurants. Do all of that. But make sure Bistrot L'Stage ends up on the list too.
Because this isn't just another French restaurant.
Outside Quebec, I honestly can't think of many places that capture that feeling better.
But only come here if your company loves food and is fun when ordering it.
