I’ve said it before and I’ll say it again: whether it's the room, the lighting, or the company, atmosphere constitutes a substantial aspect of every dining experience.

That great and true. But sometimes I want to stay home in my pj’s.

The team behind Main Street favourite Suyo and its recently introduced sister restaurant Uchu Cevicheria & Raw Bar have extended their repertoire into the realm of delivery with the launch of RICO: a delivery only Peruvian chicken concept.

RICO will bring Chef and Owner Ricardo Valverde’s ingredient-forward cuisine and commitment to fresh, local ingredients into the previously unexplored territory of delivery. Every chicken is certified organic and sourced from Windberry Farms in Abbotsford. From here, they are marinated for 24 hours in yogurt and a blend of spices, brushed with RICO’s signature anticuchero (a smoky Peruvian marinade), and chargrilled over an open fire. The end result? A juicy, smokey, chicken with a beautifully charred exterior.

The menu offers both half and whole boneless chickens, alongside a variety of house-made sides, including Peruvian cornbread, garlic rice, chimichurri fingerling potatoes, and a made to order tomato, cucumber, avocado salad.

Sauces are also available (and highly recommended), like creamy Aji Pollero, Tapenade Aioli, Fuego Baby hot sauce, and Rico Gravy made from slow-roasted chicken bones and aromatic herbs.

Chicken isn’t your choice protein? Unlikely, but if so, that’s alright. The menu also offers Arroz Con Pato (confit duck leg with cilantro beer rice, fried egg, salsa criolla, and huancaina sauce), Lomo Saltado (AAA beef tenderloin stir fry with onion, tomato, scallion, rice, fries, and soy jus), amongst other selections. And save room for dessert - their tiramisu is made with lúcuma: a fruit native to Peru that has a unique flavour akin to caramel.

So stay in tonight. Forget cooking. Keep the slippers on, and treat yourself to a meal you can only get at home.
