COFU, veteran plant-based sushi innovators, unveiled their brand-new Chinatown location on July 9, 2025 - positioning it as Canada’s first fully vegan omakase restaurant. Founded by Japanese restaurateur Akiko Gulkison, COFU transforms the traditional craft of sushi into a celebration of nature with an 18‑course omakase led by chef Ko Tanimizu, showcasing seasonal vegetables, vegetable nigiri, pressed sushi, and inventive plant-based “eel.”

In the evenings (Wednesday–Sunday, 5 p.m.–10 p.m.), guests settle into a serene, minimalist 10‑seat counter space designed to foster mindful appreciation of every bite. By day, the space transforms into Hush, a quiet vegan café offering Japanese-inspired drinks, obanyaki, and delicate sweets in a tea‑room ambiance (open Mon–Fri 7:30 a.m.–12 p.m., Sat–Sun 8:30 a.m.–1 p.m.).
