We’re excited to have just launched our latest episode of Mates on Crates, featuring Wendy Spence, Director of Restaurant Operations at Osetra in Downtown Vancouver. Freshly opened and already buzzing, Osetra is an elevated seafood and caviar-forward destination inspired by flavours “all along the Pacific Ocean”, served in a warm, sophisticated space where terracotta tones, thoughtful lighting, and a lively dining room set the tone for an unforgettable night out. Wendy has been leading the charge through the opening sprint, bringing calm, precision, and serious hospitality chops to one of Vancouver’s hottest new rooms. It was a pleasure to sit down with Wendy to chat coastal cuisine, the all star team behind the concept, what guests can expect on a night out at Osetra, and all of Wendy’s favourite spots.
