We’re excited to have just launched our latest episode of Mates on Crates, featuring Scott Thornhill, Co-Owner & Chef at Belli Pizzain Vancouver, BC. Just six months in, Belli has already made a strong impression on Commercial Drive with its New York style sourdough pies, standout dips, natural wine, and a fun, East Coast-inspired energy that makes the room feel equal parts neighbourhood hangout and party. Scott brings a sharp culinary background to the project, having worked in fine dining, spent time at Joe Beef in Montreal, and helped open new projects with Nemesis Coffee. As co-owner and chef, his superpower is building systems, training teams, and creating food that feels high quality, comfortable, and fun all at once. It was a pleasure to sit down with Scott to chat about how Belli came together, what makes their pizza so distinctive, the art of dough and dips, the vibe behind the room, and all of Scott’s favourite spots.
