We’re excited to have just launched our latest episode of Mates on Crates, featuring Dylan Campbell, Head Distiller & Distillery Manager at Seabourne Distillery in Noosa, Australia. A Noosa-based distillery and bar, Seabourne Distillery is the kind of place you drop into for a proper drink, then end up staying for a second because the menu is built around thoughtful, house-driven flavour. Expect inventive cocktails, relaxed hospitality, and a front-row seat to what modern Australian distilling looks like. Dylan leads the distillery as Head Distiller and Distillery Manager, bringing a sharp palate and a practical, hands-on approach to both production and the drinks program. It was a pleasure to sit down with Dylan to chat cocktails, Noosa staples, hidden gems, and the kind of day trips worth planning your week around, and all of Dylan’s favourite spots.
