We’re excited to have just launched our latest episode of Mates on Crates, featuring Dylan Brentwood, Bar Director at HUX Bar & Bistro in downtown Halifax. HUX is a new neo-bistro on Barrington Street, bringing together warm hospitality, locally inspired cooking, a serious beverage program, and the kind of late-night energy that makes a room feel like it already belongs to the city. Guests can expect thoughtful service, a room with personality, and food that feels familiar in form but deeply considered in execution. Dylan brings a sharp point of view to the bar, shaped by years spent moving from coffee shops to cocktail programs across Newfoundland, Toronto, and Halifax. It was a pleasure to sit down with Dylan to chat about Halifax’s food scene, trust in hospitality, the future of the city’s restaurants, the legacy of Field Guide, HUX’s first few months, mental health supports in the industry, and all of Dylan’s favourite spots.
