We’re excited to have just launched our latest episode of Mates on Crates, featuring Bill Osborne, Executive Chef at Freehand Hospitality in Halifax, Nova Scotia. Freehand Hospitality is behind some of the city’s most talked-about restaurants, including Drift, Café Lunette, Peacock Wine Bar, Darya, Salt + Ash, Mystic, and the newly reopened Maurizio’s, a Halifax institution with decades of history behind it. Guests can expect restaurants that blend strong concepts, warm East Coast hospitality, and a genuine sense of place, whether that means French bistro classics, waterfront live-fire cooking, regional fine dining, or the revival of a beloved Italian dining room. Bill’s culinary journey has taken him from Ontario to London, Singapore, Toronto, and now Halifax, with time in acclaimed kitchens including Scaramouche, Foliage, Bar Boulud, DB Bistro Moderne, Canoe, America, and Biff’s Bistro. It was a pleasure to sit down with Bill to chat about opening restaurants, bringing Maurizio’s back to life, the Halifax hospitality scene, his culinary journey, and all of Bill’s favourite spots.
