Chez Céline, a new French-Quebecois restaurant, is set to open on Friday, May 23, 2025, at 4298 Fraser Street in Vancouver's Fraserhood neighborhood. The establishment is a collaboration between J-C Poirier, the chef and owner of Vancouver's Michelin-starred St. Lawrence, and first-time restaurateurs Margaux Herder and David Lawson, both alumni of St. Lawrence.
The restaurant aims to blend the edgy charm of Montréal, the elegance of Paris, and the communal warmth of Québec’s casse-croûtes, offering an inviting space for friends, family, and everyone in between. Chez Céline will operate Wednesday through Sunday from 5pm, with brunch service available on weekends.
It joins a vibrant food neighborhood - featuring Bar Bravo, Masayoshi, Nammos Estiatorio, AMA Bar, Pizza Carano and more - increasingly becoming a destination for Vancouverites.
Reservations will be available soon, but ample room will be left for walk-ins.
The team has taken over the space formerly occupied by Say Mercy!, which closed in November 2024.
